BERENJENAS A LA SICILIANA





- 2 berenjenas
- 1/2 cebolla
- 1/2 pimiento verde o rojo
- 1 vaso de tomate triturado
- queso mozzarella
- queso rallado
- orégano

Se cortan las berenjenas a lo largo, se les echa sal y se ponen boca abajo en un plato media hora para que suelten el amargor. Se pocha la cebolla con el pimiento, se añade el tomate y el orégano y se deja cocer un poco para que pierda líquido. Se les quita la sal a las berenjenas, se les hace unos cortes en la carne y se fríen por la parte que no tienen piel. Una vez fritas se les quita la carne con una cucharilla y se añade al tomate dando unas vueltas al fuego. Se echa también la mozzarella o el queso que se quiera, se mezcla bien y se rellenan las berenjenas. Se espolvorea con el queso rallado y se meten a gratinar a 170ºC hasta que el queso esté dorado.
